Pumpkin Dinner Rolls!

Pumpkin Rolls

Well, it is official! I made my first batch of Pumpkin Rolls this season last night and it’s starting to really feel like fall. ๐Ÿ™‚ *Happy Sigh inserted here* So, to keep in the fall pumpkin theme here on Granola Girl Bakes, I thought I would share my very own Pumpkin Roll recipe with you! Slightly sweet, pumpkiny, and delightfully vibrant, I guarantee these dinners rolls would be a fall favorite for you. Happy Fall!!

Yields 24 large rolls!

Ingredients

  • 2 TBS active dry yeast
  • 1/2 tsp white sugar
  • 1 cup warm water
  • 6 TBS butter [melted]
  • 1/2 cup honey
  • 1 TBS salt
  • 4 eggs [beaten]
  • 1 15 oz can pumpkin
  • 5 or more cups flour (I did a 50/50 wheat to white ratio)

Directions

  1. Activate yeast in warm water with 1/2 tsp white sugar. Once activated add butter, honey, salt, eggs, and pumpkin. Mix well! Slowly begin incorporating flour until dough is slightly sticky but workable.
  2. Place dough on a well-floured surface and knead for 6 minutes, adding flour when necessary. Place in lightly oiled bowl and allow to rise until double(about 1 hour.) Meanwhile generously butter 2 9×13 pans (or a larger cookie sheet!)
  3. Punch down, divide dough into 24 pieces, and form into round balls. Place dough in buttered 9ร—13 Pyrex and allow to rise until double again(30 or so minutes!) Preheat oven to 375ยฐ(f).
  4. Bake for 15-20 minutes or until golden brown!
  5. Serve with homemade apple butter, honey, or just by themselves and enjoy!! ๐Ÿ™‚

Pumpkin Spice Latte Cookies with Caramel Cream Cheese Frosting

Pumpkin spice Latte cookies Granola Girl Bakes Y’all! Fall is almost officially here[1 day away :] and I can’t wait! The excitement is OVERWHELMING! ๐Ÿ™‚ With fall comes all things pumpkin. Pumpkin Spice Lattes, Pumpkin muffins, Pumpkin Soup, Pumpkin Pound Cake… well you get the point. So, I figured it was about time to start concocting pumpkin recipes! I allowed myself 2 cans of delicious organic Pumpkin in my grocery budget this week and instantly knew what I wanted to make. Pumpkin Cookies! But not just Pumpkin Cookies, Pumpkin Spice Latte Cookies with Caramel Cream Cheese Icing! If you try any recipe on my cooking blog, this is the recipe to try!!!!! I added instant coffee to a festively spicy pumpkin cookie not too sure how they would taste. The end result? An extraordinarily moist pumpkin cookies with a hint of espresso topped off with a decadently rich espressonated caramel cream cheese icing!ย  ๐Ÿ˜€ They were a hit at my house. Super quick recipe and a delightfully delicious fall treat! Happy Fall! Yields 25-30 cookies

  • 1 cup butter {softened}
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 heaping tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 eggs
  • 2 teaspoons vanilla
  • 1 TBS instant espresso or coffee
  • 1 8-ounce can pumpkin
  • 2 cups all-purpose flour

Frosting

  • 1 stick butter {softened}
  • 4 oz cream cheese {softened}
  • 1/2 cup caramel
  • 2 tsps instant espresso or coffee
  • 1 TBS vanilla extract
  • 4-5 cups powder sugar

Directions:

  1. ย Preheat oven to 350 degrees. In a large bowl beat the 1 cup of butter with an electric mixer on medium speed for 30 seconds. Add granulated sugar, baking powder,baking soda,salt, cinnamon,and the nutmeg. Beat until combined. Beat in the egg, dissolve espresso in 2 teaspoons of vanilla, and add to batter until combined. Beat in pumpkin. Slowly add flour until combined and scrape sides of bowl to incorporate all ingredients!
  2. Using a small ice cream scoop or cookie scoop, drop dough by heaping teaspoons 2 inches apart on ungreased parchment-lined cookie sheets. Bake for 10 to 12 minutes or until tops are set. Transfer to wire racks to cool.
  3. For frosting, dissolve instant coffee in the vanilla. Beat butter and cream cheese until combined. Add Caramel and powder sugar along with instant coffee & vanilla. Whip until fluffy, adding more powder sugar to achieve desired consistency!
  4. Once cookies are cooled, generously ice and sprinkle with cinnamon.
  5. Enjoy!!!

Spiced Eggnog Cupcakes

It’s eggnog season! ๐Ÿ™‚ If your like me, you anticipate this season, hoping the stores see the need to stock their shelves with the creamy spicy goodness a few weeks early. And when the day finally arrives and the eggnog is lining the shelves, you buy near a gallon! ๐Ÿ˜‰ Best brand I have tasted by far is Promise Land!! Seriously delicious. ๐Ÿ™‚

So this morning I woke up to near freezing temperatures, the air was crisp, the sun was shining, and it finally and truly felt like FALL! Plus, I was super hungry and couldn’t think of anything I would rather do this fine day than bake. ๐Ÿ™‚ So, I set out to create a recipe I had been thinking about for a few days, Spiced Eggnog Cupcakes!! An added plus was I was kid-sitting 2 little ladies who just happen to have way more energy than I do! So they both lent an overly helpful hand. ๐Ÿ˜‰ A spicy pound-cake baked to golden perfection, a bit of buttery caramel, then a rather decadent eggnog cream cheese icing tops it off, but don’t forget to sprinkle the nutmeg & cinnamon and add a caramel drizzle to complete this mouth-watering cupcake! Truly, one bite will have you saying “now that’s fall!” ๐Ÿ˜‰

Yields 24 decadent cupcakes! ๐Ÿ™‚

Cake Ingredients

  • 1 1/2 cups butter, softened
  • 1 1/2 cups packed brown sugar
  • 1 cup sugar
  • 3 eggs
  • 3 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 3 1/2 cupsย  flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup eggnog

Eggnog Icing Ingredients

  • 1 cup salted butter {softened}
  • 1 8oz softened cream cheese
  • 1/3 cup eggnog
  • 1 tbs vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 pkg {7 cups} powdered sugar
  1. Line 24 muffin cups with liners and preheat oven to 350 degrees.
  2. In the bowl of a mixer, cream butter and sugars together, beating until fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition.
  3. Add vanilla, cinnamon, allspice, cloves, and nutmeg.
  4. Sift together flour, baking soda, and salt; add flour mixture to egg mixture alternating the eggnog, and beginning and ending with the flour.
  5. Pour into prepared muffin tins and bake for 15 minutes or until golden and inserted toothpick comes out clean. Allow to cool on wire rack.
  6. Meanwhile prepare the icing! Place all icing ingredients in large mixing bowl, beat(starting on slow speed and working your way up to med-high speed) until fluffy(about 4-5 minutes!)
  7. Spread about 1tbs caramel on top of cooled cupcakes. Then pipe on icing, sprinkled with a bit of nutmeg & caramel, and finish with a delightful caramel drizzle!
  8. Enjoy!!

Fall is here!! Whats not to love about this beautiful season? ๐Ÿ™‚ย  And though the temperatures nearing 100ยฐF, I figured it was time for a Pumpkin Spice Latte to officially start off the Autumn season! ๐Ÿ˜‰ Homemade pumpkin milk, delightfully buttery caramel, and, yes, freshly whipped cream{sweetened with maple, of course!} come together to create a grand combination! Add a few friends and you have a lovely coffee break. ๐Ÿ™‚ Happy Fall!

Yields 1 lovely Latte ๐Ÿ™‚

Ingredients

  • Your favorite mug!
  • 1/4 cup organic milk{may want more or less}
  • 1/3 cup pumpkin milk {recipe here!!!}
  • 2 shots strong espresso
  • 1 tbsp raw sugar
  • 1/4 tsp pure vanilla extract
  • Whipped cream
  • Caramel for drizzling{recipe here}
  1. Grab you favorite mug and pour in espresso. Add raw sugar & vanilla!
  2. Combine regular milk and pumpkin milk then froth{or heat}.
  3. Pour over espresso, top with whipped cream and lots of Caramel.
  4. ENJOY!

Raspberry Trifles!

Raspberry Trifles {Granola Girl Bakes}

Summer has almost come to an end! Can you believe it?! But it’s not gone yet and seeing I still have 2 weeks left until I have to officially say “goodbye” to summer I decided to make a summer favorite! Raspberry Trifles. ๐Ÿ™‚ Well, these are a summer/fall/winter/spring favorite, really!ย  Freshly baked pound cake, super tart raspberries, a hint of lemon, sweet cream-cheese filling, and freshly whipped cream{sweetened with maple ’cause it doesn’t get much better than pure maple!} makes for a rather delightful combination that will definitely satisfy your sweet tooth! ๐Ÿ™‚

Note: I used pure maple to sweeten the cream but you can definitely use regular powder sugar! Both will work. (:

Yields 8 mugs or 1 larger trifle dish!

Ingredients

  • 1 1/2 cups heavy cream
  • 1/4 cup pure maple{or powdered sugar!}
  • 1 tsp pure vanilla extract
  • 2 8oz packages creamcheese{softened!}
  • 2 tsp lemon juice
  • 2 tsp pure vanilla extract
  • 1/2 cup white sugar
  • 1ย  pound cake
  • 10 oz frozen raspberries{thawed and drained BUT reserve juice!}
  • cocoa powder for dusting!

Directions

  1. In a medium bowl, beat cream with 1/4 cup maple or sugar until stiff peaks form. In another bowl, cream together cream cheese, lemon juice, vanilla and 1/2 cup sugar. Fold 2 cups of whipped cream into cream cheese mixture. Reserve remaining whipped cream.
  2. Cube pound cake into 18 – 1/2 inch slices. Drain raspberries, reserving juice. Line the bottom of a 3 quart glass bowl or trifle bowl with one-third of the cake slices. If using mugs do the same but on a smaller scale. ๐Ÿ™‚ย  Drizzle with some raspberry juice, then spread one-fourth of the cream cheese mixture over cake. Sift one-fourth of the cocoa over that. Sprinkle with one-third of the raspberries. Repeat layers twice. Top with remaining cream cheese mixture, whipped cream and sifted cocoa. Cover and refrigerate for at least 1 hour but best when you let the set overnight!
  3. Grab a cup of coffee and about 7 or so good friends. ENJOY!! ๐Ÿ™‚

Seriously Delicious Hot Chocolate

The last 2 days have been COLD. Even colder seeing our heater is down for repair. We weren’t expecting such extremely chilly weather but after the scorching summer, we are loving it! So what goes with super cold weather better than a cup of Hot Chocolate and a few layers of sweaters?? ๐Ÿ™‚

Hot Chocolate is a necessity for the winter months and I had been looking for the perfect Hot Chocolate recipe for years.ย  Finally found it! In the words of my sister, Grace, “this hot chocolateย  is like drinking a brownie!” I found the original recipe on Cooking for Seven a year and a half or so ago and with only a few minor changes, we have been drinking it ever since!
Sweetened with Pure Maple Syrup and topped off with a maple whipped cream, yes, this recipe is RICH…. So rich, you may have a hard time drinking an entire serving! But y’all are sure to love it. ๐Ÿ™‚

Original Recipe 5-6 cups of cocoa!

Ingredients

  • 3 1/2 cups whole milk(I usually add up to 1c more depending on thickness)
  • 1/2 cup heavy cream
  • 8 ounces chopped unsweetened chocolate
  • 6 tbs pure maple syrup(might need more if you prefer your cocoa a little sweeter!)
  • 2 tsp pure vanilla extract
  • 1/8 tsp salt

Directions:

  1. ย In a medium saucepan, bring the milk and cream to a low simmer over medium heat, whisking occasionally.
  2. ย Add the chocolate, maple syrup, vanilla, and salt. Whisk vigorously until all of the chocolate has melted. Cook for an additional 4 minutes, whisking constantly.

Maple Whipped Cream

Ingredients:

  • 1/2 cup heavy whipping cream
  • 1-2 tbs maple syrup (more if you like your whipped cream very sweet)
  • 1/2 teaspoon vanilla extract

Directions:

  1. Place all ingredients in a large bowl and beat until stiff.
  2. Add a dollop or two or four ๐Ÿ˜‰ on your cup of cocoa and enjoy!

Pilgrim Pies

For 7 years I have made these pilgrim pies but I honestly doubt the pilgrims ever experienced such a delightful delicacy! It has become somewhat of an unspoken tradition for me to make my first batch in the first week of October(can any one believe it is already October?!). If I don’t make these pies as soon as the 1st of October twirls around, I am reminded by 1/2 dozen kidlettes that, “it is officially Pilgrim Pie Season”!

Original Recipe Yield 12-15 “pies”

Ingredients

  • 2 eggs
  • 2 cups brown sugar
  • 1 cup vegetable oil
  • 1 tsp vanilla
  • 1 (15oz) can Pureed Pumpkin or 2 cups freshly pureed pumpkin(I used freshly pureed)
  • 3 cups flour
  • 1tbs pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
Filling
  • 4 oz cream cheese – softened
  • 1/2 cup butter – softened
  • 2tsp vanilla
  • 4-5 cups powder sugar

Directions

  1. Heat oven to 350 degrees .
  2. Beat eggs, sugar, oil, vanilla, and pumpkinย  in large bowl. Add flour, pumpkin pie spice, soda, powder, and salt until well combine.
  3. Using an ice cream scoop(my favorite kitchen tool) or large spoon, spoon 1/4 cup dallops onto ungreased cookie sheet 1 1/2 inches apart. Bake for 11-14 minutes or until bottoms are golden. Let cool on tray for 5 minutes then remove from tray and letย  cool completely on parchment.
  4. Prepare filling. Combine all filling ingredients and blend on high speed until smooth and fluffy!
  5. Pipe filling onto 1 cookie and top with the second cookie. Continue with remaining cookies and Enjoy!
